Here is a little bit about the phenomenon know as American Chili. Chili is a heartland dish, created by working class women in Southern Texas during the mid 1800’s. By the 1920’s dozens of chili parlors or small restaurants that focused on the dish, populated the south. The ingredients get disputed, but it typically includes meat, tomato sauce and of course chilis- generally dried but historically fresh. The big dispute is whether to add beans and just which beans or additional veggies should be added.
Now the famous Cincinnati style chili brand is NOT the same. Empire, Skyline or Gold Star are the main chili parlors still slinging this style. The recipe was derived from Greece or Macedonian immigrants and includes a Mediterranean spiced stew atop spaghetti noodles.
Whatever your recipe it is, beans or no, meat or veggie, chili is a cold weather treat. It is designed to warm the belly and the soul with the blend of gentle (or fiery) spices.
